Born in the vibrant heart of Kingston, Jamaica, Waynie — as he is affectionately known — grew up immersed in the rich sights, sounds, and flavours of Jamaican cooking. From a young age, he watched his mother create meals that brought people together — full of love, spice, and soul. It was in that kitchen that his passion for food was born, sparking a lifelong journey.
Determined to follow his calling, Waynie attended catering college in Jamaica, developing the technical foundation to match his natural talent. His path then led him through kitchens across both Jamaica and England, each experience sharpening his skills and shaping his signature style — a vibrant blend of traditional Caribbean flavour and global culinary influences.
At the heart of his craft is his signature jerk sauce — a secret, handcrafted recipe developed over years of experimentation, rooted in family traditions and personal innovation.
